Jerez is about to add a new gastronomic gem. On July 11, Bina Bar will reopen its doors, a space where fire, tradition, and flavours from around the world come together. Bina Bar returns after a complete renovation, intending to become that place you always want to return to.
Behind Bina Bar there are two key names in the current gastronomic scene: Juanlu Fernández and Dolce Nilda. Juanlu, a chef from Jerez with a solid and deeply rooted career in his homeland, has turned his restaurant LÚ into a true benchmark for Andalusian haute cuisine. This is evidenced by the fact that last November it received its second MICHAEL Star, placing it unquestionably among the national and international gastronomic elite. LÚ is also the only restaurant in Jerez with this distinction, a milestone that highlights the talent and vision of the chef.
With his partner and wife Dolce, winner of the 2025 Montagud Award for Best Front-of-House Manager, Juanlu has created a small gastronomic universe in his hometown. LÚ is joined by Krombol, which focuses on breakfasts and mid-afternoon snacks. Now, a new concept is joining them, completely reinventing itself to offer a more informal cuisine that is equally committed to the product, flavour, and quality in every detail, common traits in all the group’s establishments.
Bina’s origins date back to 2020, when it began as a small refuge in the middle of the pandemic. Five years later, the project has transformed without losing its essence. It remains a place for family and friends to share, but now with a broader and more irreverent offering.

The menu features well-known classic dishes, such as tuna mollete (a type of bread roll) and shrimp salad, alongside new dishes inspired by the LÚ team’s travels around the world. There are also options such as 180-day aged picanhaand papas aliñás con caballa al sarmiento (potatoes with mackerel). There will be a special section for traditional stews such as Grandma Josefa’s tomato soup and the chef’s stewed tripes. A charcoal grill will allow meat, fish, and vegetables to be cooked à la minute, while seasonal products will be added to the menu depending on what the market has to offer at any given time.
For the sweetest part of the menu, the group’s pastry team—with its bakery next to Bina—will offer a changing selection of desserts with flavours that pay homage to Colombia, Dolce’s homeland, and some of the chef Juanlu’s favourite treats will also be on the menu.
The drinks’ selection includes creative cocktails based on sherry wines, developed by the LÚ team, which will add a local and creative touch to the experience.
But Bina Bar is much more than just good food. It’s a place made for things to happen. From special gastronomic events featuring Juanlu’s stews to live flamenco, weekend rice dishes, and other surprises, the space promises to be dynamic, lively, and, of course, full of duende.
All this in a warm environment full of personality, designed by Daniel Muñera, who was also responsible for the interior design of Krombol. At Bina, Andalusian and contemporary styles blend naturally, creating a welcoming atmosphere from the moment you walk through the door.
The opening of Bina Bar on July 11 will be the start of a new era in Jerez’s food scene, with the signature style of chef Juanlu Fernández, who has made Jerez famous around the world’s culinary scene.
